‘Seepu – comb, ‘Seedai’ refers to a kind of crispy. Preparation of this is entirely different from Thenkuzhal. Though the basic rice flour used is the same, in this it combines with another ingredient, roasted gram flour in a specific proportion and the dough is made using coconut milk instead of water. The dough is passed through a plate which gives the combed impression on one side of the dough. It is laid on sheets of paper and cut into strips of 3 or 4 inches length and each strip is struck from end to end to make a ring and deep fried. this is unique in shape as well as taste – rich and crispy.
