“Then is Honey, ‘Kuzal’ is a tube, ‘Murukku’ is the general term for any crispies. The basic ingredients for this is rice flour and black gram lentil flour. Each of this flour is prepared by special methods and mixed in a specific ratio and made into a dough by adding water and salt. This is put into a special equipment in small portions and pressed, passing through the holed plate the dough takes the spring shape. The flow of the dough is controlled according to the size of the Murukku. We desire to make and this dough is let to fall on hot oil. When you break the crispy and see, you can find the rings are like tubes – the hot oil and the way the equipment made the dough has created this Kuzhal (Tube) formation within the sticks and it is nectarian in taste, hence the name Thenkuzhal.”
